the classic one, maybe the patch you saw : /pd/doc/3.audio.examples/56.delay.pitchshift.pd
frequency shifter : /pd/doc/3.audio.examples/52.ssb.modulation.pd
also, you can use some spectral techniques to do this with some modifications, you can turn the /pd/doc/4.fft.examples/11.pianorev.pd reverb patch to a pitch-shifter

There also is the munger~ external, which is in Percolate, I think. It's a granulating delay line, that you can tune to do realtime pitchshifting.
