to texture coordinates. S, T, U and V are the standard names for texture coordinates in the literature, just like X, Y & Z are standard names for 3d coordinates and R, G & B are standard names for colors.
the reason why the help-file doesn't mention much more, is that it would become impossible big.
i think a basic understanding from what [pix_coordinate] does can be guessed when playing a bit with the help-patch and feeding it with your own values.

Column numbers and row numbers of the texture image.
When using pix objects, those are called X and Y instead.
The direction of T might be reversed compared to Y... or not.
