I am not sure if I have installed ggee incorrectly of simply don't know how to use the extensions. I am not experienced with PD so I am not sure.
Is there a simple way to test to see if it is installed correctly?

You have to use the -path and not the -lib :)
Don't worry, this is a thing that happened frequently to me when installing a new system ... don't ask me how I feel after realizing it. (And don't say it is wrong in the documentation too ?)
