So, I was wondering if anyone knows how a limiter/expander/compressor works so I can build a patch. It seems to me that these devices simply turn up/down the volume at different levels, correct? Is there spectrum analysis involved? Should I do a [fiddle~] and when some collection of resultant amp's cross some threshold level chenge the volume?

There are two externals (that I know of) that might suit your needs:
In the end you're right, you just have to adjust the volume according to incoming signal levels. More advanced compressors do that in different independend frequency bands.

The "env~" object can be used to build a simple compressor/limiter.

The "env~" object can be used to build a simple compressor/limiter.
There is a quite good one under zexy-lib as external called limiter~ with which you can build a limiter and compressor system.
