hmm,
a short test on my 10.9 system yielded also strange results. some apps work, some not.
pd-extended hides the menubar on startup only to reappear when it’s fully opened.
the info.plist edit works as it should on a snow leopard system.
sorry for leading you into the wrong direction…

you can hide the menubar on a per app basis. to edit info.plist you only need a texteditor. right click on the pd app and choose show package contents. from there find and edit info.plist accordingly.

I have tried searching for an answer to my problem but no luck. I am using Gem on my primary display and can't seem to hide the menu on OSX 10.8 . I have tried sending menubar 0/-1 messages and border 0 messages but no luck. I found something about using the Property List Editor.app to edit info.plist for PDExtended but OSX 10.8 doesn't have this app.Does anyone have a solution other than adding a second display?
