Older hardware works by Volts per Octave (e.g. Arp, Moog) or Volts per Hertz (e.g. Korg). If you use a 16-bit DAC you can get a lot of frequencies. The arp2600 had a keyboard adjustment for the intervals between notes. Not polyphonic though unless you have a few of them :). Martin
