yeah make sure your xcode and xcode command lines tools are all up to date. then try again and can you copy and paste errors you get from the console?
also maybe get rid of all the vlc stuff for now and just do: ./configure --without-QuickTime-framework --without-Carbon-framework --with-pd=/Applications/Pd-0.48-1.app/Contents/Resources --with-defaultwindow=gemmacoswindow
trial and error
also adding and issue here might be better than though the Gem-Dev list: https://github.com/umlaeute/Gem/issues

./configure --help
you can see options for configure. whatever errors you are getting try to configure --without-WHATEVER
