I'm trying to get some acoustic instruments to communicate with Pd as the performer plays them. Up until now, I've been using microphones and fiddle~ to accomplish this, however, I'd like to allow more direct means: the press of an instrument key, etc. The problem is, I'm on a tight, tight, budget. Does anyone have any minimalistic suggestions on how to do this?

A USB keyboard and the [hid] object? There are a lot of really cheap, useful USB HID devices out there, and they are relatively easy to use with [hid].

Maybe something using Piezo/contact microphones? They are very cheap, you can even rip them out of used "music" christmas cards, which should be in great supply soon.
