Ok, so what is the best way to get 3 chaanels in a cost effective way? What cards do people suggest. Say a budget of $100 max?
PCI or USB (but it would be nice if it were supported by linux)

Well, yes. But there is a trouble with multiple sound cards. They tend to drift out of sync sooner or later. So the right way is to get a multichannel card. But I have no experiance with this kind of multichannel/multicard operations myself, I'm just passing you what I've heard.
I suppose once you have multiple OSS devices you simply specify the device numbers for in and out? or do you just set the number of input channels?
I've never done that. But maybe you should try ALSA. ens1370/1 drivers are excellent.
