Hi Achim,
You'll have no latency problems with a USB pedal in Linux using the [hid] object. No "noticeable" latency at least.
There are two problems arising when attempting to built a USB pedal : first you need to actually make the pedal (the traditional cry baby design is probably the easiest way to go), then you need to connect it to a good usb gamepad. I insist on the "good" here because it is essential if you want to have a decent expression pedal. The best would be to test the gamepad before buying it and turning it into a pedal.

I am looking for an expression foot controller. Something working somehow like a wah-wah pedal. But I am unsure if I need a device with an OSC dedicated driver, or if any USB pedal would do the job. What I primarily expect from this device is accuracy, and low-latency.
Do you have any examples (photographs, audio samples) of the device you made? I am curious!

I've built one myself, based on a usb gamepad. I can give you some tips. But you'll have to be more precise about what you really need (expression pedal or just switches?)
