You may succed with a line-level DC current running through the switch, into a *cheap* soundcard.
We just tried this with an odometer (reed-relay) and it was working ok, the sound card didn't fry, still i'd never try it with an expensive one.

I'd rather try with an arduino or to connect the pedal to an usb mouse click or a keyboard key,
this pedal shouldn't generate a signal. I's just a switch where when the pedal is not pressed the tip and ring are shorted.
