there is a html-documentation that comes with pd and some very good help-files. if you start pd then help - pure-documentation is a very good start to go. also you learn what the different objects in pd mean by right-clicking and selecting "help". right-clicking in the warking window opens a list of all (or nearly all) pd-objects.
a very good book about digital signal processing for me is www.DSPguide.com (download pdf-files), but that depends on what you would like to do.
