I recently had to compile some externals for Mac Intel and found (http://lists.puredata.info/pipermail/pd-dev/2006-09/007455.html) that versions before 0.40 (test version at present) are not 100% compatible with Mac Intels. Hope this helps!
We (our group at university) would really like to have a release of GEM compatible with Mac Intels...

Try building one yourself, its not too bad and it would most likely speed up the process of getting Gem build on Mac/Intel.
